I've been making these the exact way but with flax meal instead. They are sooo much better with almond flourThis was one of my favorite recipes when I was on a low carb diet:
"Muffin in a Minute"
In a coffee mug, place the following ingredients:
- 1/4 Cup Almond Meal
- 2 tsp Splenda (or an equivalent amount of Stevia)
- 1/4 tsp Baking Powder
- 2 tsp Cinnamon
- 1 Egg
- 1 tbsp Coconut Oil
Stir thoroughly.
Microwave on high for 1 minute.
Agreed. Flax seed is "ok", but almond meal is much tastier. And if it's still not tasty enough you can always add more stevia and cinnamon..I've been making these the exact way but with flax meal instead. They are sooo much better with almond flour![]()

Because the non hydrogenated stuff is quite a bit more expensive.I'm not so sure that hydrogenated coconut oil actually has trans fat, trans fat is created when polyunsaturated fat is hydrogenated but coconut oil is so stable that the amount of trans fat created is very very negligible

In my house, coconut oil is very rarely solid. It's mid nineties outside and right around 80 inside. Too hot.They hydrogenate it so it's more likely to be solid at room temperature.

I've tried sticking it in the fridge but it becomes so hard i have to chisel it out of the jar. I just leave it in a squeeze bottle and squirt it like olive oil.
