How much coconut oil per day?

This was one of my favorite recipes when I was on a low carb diet:
"Muffin in a Minute"
In a coffee mug, place the following ingredients:
- 1/4 Cup Almond Meal
- 2 tsp Splenda (or an equivalent amount of Stevia)
- 1/4 tsp Baking Powder
- 2 tsp Cinnamon
- 1 Egg
- 1 tbsp Coconut Oil
Stir thoroughly.
Microwave on high for 1 minute.
I've been making these the exact way but with flax meal instead. They are sooo much better with almond flour :woot:

Agreed. Flax seed is "ok", but almond meal is much tastier. And if it's still not tasty enough you can always add more stevia and cinnamon..

I always have a few 500ml bottles of coconut oil around the house from my annual Pacific trips but don't drink the stuff. I rub it on my skin most evenings both for moisturising and to sooth mild sunburn if I've been working outside in the strong sun. I've always thought lots of plain water during the day was the best combat against dermo - and if it gets nasty then you just have to bite the bullet and have a few days to a week off kava.

I have eczema on and off (I suspect stress, but salt and sugar might also be the culprit). For my sake, omega 3 is more useful than coconut.

2-3 frozen, ripe bananas, a tablespoon or 5 of flax and/or hemp oil, and a dollop of coconut oil. Blend it in a decent food processor, and you have "ice cream". Or a blender, with some coconut milk, and you have a milkshake. Avocado is not bad either. Flavor it with berries, cocoa, or whatever you like. I used to use a lot of cocoa, melt some peanut butter and pour over it, and maybe a teaspoon of honey.

I'm not so sure that hydrogenated coconut oil actually has trans fat, trans fat is created when polyunsaturated fat is hydrogenated but coconut oil is so stable that the amount of trans fat created is very very negligible

Oh yeah? Well that's good news. Because the non hydrogenated stuff is quite a bit more expensive.

In my house, coconut oil is very rarely solid. It's mid nineties outside and right around 80 inside. Too hot.
Yeah, in my house coconut oil is solid in the winter, and liquid in the summer...You can stick it in the fridge if you want it to be solid..

I've tried sticking it in the fridge but it becomes so hard i have to chisel it out of the jar. I just leave it in a squeeze bottle and squirt it like olive oil. Makes great popcorn.
